Is there a way to adjust the review layout?
So for example, in my image, the red lines indicate the edges I'd like to stretch sideways to the blue lines. That way the example images aren't cut off at the bottom. Obviously stretching horizontally wouldn't make the image fit better vertically, but I would want to have the definition to the left and the image to the right if that's possible. Like I have in my mock up image. Is this possible already? If not, would it be something to possibly add to the roadmap?

Not in Migaku, but if you know how to code you could probably create an extension that could do it
If there’s enough interest they’ll usually do it
Currently I would imagine it’d be a very low priority thing for them

If you want structural changes to the cards then you're going to have to use Anki
